A quarter of a century. Scary. So far today has been a great day, and the birthday festivities started last night. I got home from leadership class to find that my craft room was transformed! The organization is fantastic, and I’ll be posting pictures of it this week.

This morning after I took Daniel to work, I received an email from him with a clue to the beginning of a birthday scavenger hunt. I’m about to leave the house to go on adventure. I will post all about it tomorrow!

The End of the Week Thankful List.

“You can’t just eat garbage!” – what I said to Abram this morning after finding a rapper in his mouth that he took out of the garbage without me seeing.

Things I am Thankful for This week

1) Abram’s health- even though he is almost completely healed from some nasty bronchitis and a double ear infection, it could have been worse. There’s a plethora of things that could be wrong with him, but that is not the case. I am so thankful for that.

2) Food in our house- Daniel only gets paid every two weeks, and that last paycheck was used for bills. So this weeks menu has been really scarce, but I know that compared to most of the world, my pantry is overflowing. We never go hungry.

3) A great mom- we had some good talks on the phone this week. Lots of laughter, which hasn’t happened in a while.

4) Good friends- My friend Michelle turned 26, another year for a beautiful person. I’m also thankful for my friends here in Lake City. Livin’ life together. Oh, and my friend Kay gave me a great pair of tan suede boots. I had been wanting some for a long time.

5) Lazy Wednesday- Kim took Abram for the day, and I didn’t do ANYTHING. I watched 6 episodes of glee and ate chicken fingers. I really needed some physical rest, so it was awesome.

6) A great mother-in-law- for reasons mentioned in number five, but also because she is always helping us.

7) Fitting into an old dress- I managed to put on a pre-pregnancy dress yesterday and it didn’t look completely terrible. I still have a long way to go, but it was great encouragement.

8 ) Ruby Tuesdays- they sent me a birthday coupon for a free burger. It was delicious. And free, which was mainly the best part.

9) Good talks with my hubs- some weeks marriage involves a lot of talking and figuring things out. We did it together, and with great communication. It’s so worth it, and I love him the most much.

10) Productivity- I conquered a decent amount of things this week, and I feel accomplished. That is always nice.

11) My hometown- for being hilarious. I loved theĀ  “Sh*t Miami girls say…and guys” youtube videos this week. They nail it and make me miss home so much. As much as I fight it, I will always be a Miami girl.

12) Motivation- So many people have encouraged me through their kind words this week to keep blogging because they enjoy reading. That really helps and keeps me focused.

So what are you thankful for?

A Light and Sweet Suprise!

Salads. I’m sure we all have our opinion on them.

My biggest beef with salad has always been the taste and creativity they so often tend to LACK. But the truth is they really can be delicious and exciting if you are willing to shake it up a little and try new flavor combinations. Now I will gladly eat a salad from Texas De Brazil, where there salad bar is like 3 stories of tables adorned with the most delectable salad toppings. There heart of palm is incredible. GAHH.

I have certainly found salads more desirable these days just from coming up with new ways to eat them. Here’s the one I had for lunch today, I call it The Light and Sweet Surprise Salad.

Ingredients

2 handfuls of mixed greens (I used baby spinach and romaine)

1/2 Carrot

1/2 Tomato (or a whole one if you are a tomato lover like me)

2 slices of an apple

1/4 Green Pepper

1/4 Purple Onion

1 Tbsp. Goat Cheese

Olive Oil

Raspberry Balsamic Vinegar

(All of these ingredients can be purchased at your local grocery store and produce market)

Cracked pepper, raspberry balsamic vinegar, & olive oil

Spread out the leafy greens on your plate and set aside. Dice up the carrots, tomatoes, apples, green peppers and onions. Joyfully toss them on top of the greens (it’s about to be so yummy!) Sprinkle the goat cheese on your fruits and veggies, and the drizzle the olive oil and raspberry balsamic vinegar over top of it all. Then add some fresh ground pepper to taste.

Delicious Salad

This took me all of maybe 8 minutes to make, and the tastes and textures really compliment each other. For example a bite of greens with a diced up apple and onion together is a very balanced flavor of light and intense tastes, and the onion opens up the flavors of the apple and really make it pop.

Wanna know what the surprise is? The goat cheese and the raspberry balsamic vinegar create this taste and texture similar to the inside of a cream pastry. HELLO! If you’re wondering why I added goat cheese to this otherwise perfectly vegetarian salad, here’s why. Some fats are good, and goat cheese happens to contain those good fats. When taken in small amounts, these good fats actually help you to absorb some of the nutrients in the fruits and veggies better, and ultimately help you to burn fat faster. You can always substitute blue cheese or feta crumbles if you are not a goat cheese fan.
